Comprar Vino de Jerôme Saurigny
A Jerôme Saurigny primero le tocó descubrir el proceso de vinificación tradicional para darse cuenta de que lo que quería era todo lo contrario. El arte de hacerlo sin aditivos, sin levaduras de laboratorio era una posibilidad que no se planteaba en la escuela de enología donde estudió en Burdeos, algo que lo hizo sentir sumamente incómodo. Cuando terminó, en el año 2000, empezó a trabajar en la región con la clara visión de comprar un dominio para poder desarrollar sus propias ideas. Hoy elabora vinos naturales y biodinámicos en Coteaux du Layon, en la zona francesa de Loire.

Si bien había aprendido todos estos productos biotecnológicos que supuestamente tenía que utilizar, había muchos detalles sobre la manipulación en el proceso de elaboración, pero poca teoría sobre los métodos menos intervencionistas. Hasta que llegó el día en que conoció a Patrick Desplats y Sébastien Dervieux, de Les Griottes, dos grandes viticultores naturales. Gracias a ellos, este joven viticultor supo reconocer su verdadero instinto enológico. La razón, la raíz. Al descubrir que podía trabajar sin aditivos, Jerôme abrió su bodega en 2007, en Coteaux du Layon, una región montañosa al suroeste de Angers. La zona es el Loire, indudablemente la cuna de la biodinámica.
Vinos de Jerôme Saurigny
Desde su primerísima añada, Jerôme empezó a vinificar de forma natural, con levaduras autóctonas y sin azufre. Entre sus botellas más reconocidas están el tinto joven, Jerôme Saurigny Salamandre 2017 y Jerôme Saurigny Txindoki 2018. El primero, ideal para un aperitivo, con una mezcla de uvas Sauvignon Blanc, Cabernet Franc, Sauvignon, Gamay y Grolleau. El segundo, se trata de un blanco sin crianza, con el mix perfecto de las uvas Chenin Blanc, Sauvignon Blanc, Grolleau, Cabernet Franc y Cabernet Sauvignon.
