Historia de una ilusión
La historia se remonta a hace más de veinte años aproximadamente, razón por la cual la filosofía de Bertha es tan abierta y moderna y contemporánea.
En esta bodega se mantienen los métodos más tradicionales de elaboración, respetando las variedades autóctonas y la tierra donde se da la uva.
La bodega Caves Bertha fue fundada en 1989 bajo el nombre Cavas Josep Torres Sibill, con el que empezaron a comercializar su cava o vino espumoso hasta 1998.
Al entrar el nuevo siglo también se produjeron cambios y la bodega del Penedés pasó a ser conocida como cavas Bertha.
Esta primera bodega se encontraba en el centro del poblado de Sant Sadurní d'Anoia desde 1989 hasta 2014. En el 2014, se trasladan a unas nuevas instalaciones a las afueras de la capital.
Las nuevas instalaciones estaban en un moderno edificio integrado con el paisaje y con la más moderna tecnología.
Esta bodega es el resultado de la ilusión, de las ganas de elaborar un producto serio y honesto unido a la tradición de la tierra que los acoge, el Penedés.
Los cavas
Los cavas son un tipo de vinos espumosos de la bodega Bertha producidos a partir de una esmerada selección de los mejores vinos base y elaborados únicamente con variedades autóctonas y las perfectamente adaptadas Chardonnay y Pinot Noir.
Estos vinos de la bodega ofrecen la expresión burbujeante de esta tierra en sus cavas jóvenes, cavas reserva y cavas gran reserva.
La elaboración de un cava es un proceso bastante complejo, al mismo tiempo que maravilloso. Las variedades de uvas con las que trabaja le dan a cada vino una personalidad única, imposible de encontrar en cualquier otro espumoso del mundo.
Estas variedades son macabeas, xarel·lo y parellada, cada una con una personalidad diferente, pero combinadas aportan al cava la complejidad que necesita para ser uno de los grandes vinos del mundo.
De igual modo también se utiliza chardonnay, con frecuencia mezclada con macabeo, xarel·lo y parellada.
Uso del método tradicional o método champenoise
La forma ancestral de elaboración de vinos espumosos en el Penedès es el método tradicional o método champenoise.
El proceso involucra una segunda fermentación a un vino base, dentro de la botella gracias a las levaduras y al azúcar añadido, lo cual es una de las partes esenciales de la transformación de la uva en vino espumoso.
La selección de las levaduras y la temperatura de fermentación son esenciales en el producto final. Así mismo la integración de la burbuja con el vino tiene que ser un acoplamiento perfecto, para hacer grato el momento cuando el cava entre en contacto con la boca.
El resultado final es el perfeccionamiento del carbónico natural engendrado en ausencia de aire.
Tiempo de crianza de los vinos
El tiempo de crianza es clave para el logro de la máxima calidad. Durante los primeros meses de fermentación y crianza de 9 a 13 meses, se desarrollan los aromas primarios, los que provienen de la propia uva, aromas frutales, cítricos y florales. ¡Maravilloso!
Al tener una crianza cerca de los quince meses, los aromas atraviesan por un proceso en el que se manifiestan notas de levaduras frescas y otros recuerdos. ¡Es increíble!
