Château Pontet Canet es un domaine viticole emplazado en la comuna de Pauillac que elabora uno de los vinos con más personalidad del Médoc. Vecino del terroir de Mouton Rothschild y con categoría 5ème Cru Classé, Pontet Canet es de aquellos châteaux que sigue produciendo vinos de una relación calidad precio insuperable y que en muchos casos, dependiendo de la añada, no tiene nada que envidiar a los grandes como Latour y Mouton entre otros. Todo comienza a principios del siglo XVIII, cuando Jean-François de Pontet adquiere unas parcelas de viñedo en Pauillac a escasos metros de la reputada maison Château Mouton Rothschild. Los descendientes de Jean-François ampliaron las hectáreas de viña con la compra de nuevos sectores en el área de Canet, por ese motivo la propiedad recibe el nombre de Pontet Canet. En 1865, y por razones desconocidas, la propiedad fue comprada por el negociante bordelés Herman Cruse, quedando en manos de la familia por los próximos 110 años. Finalmente, en 1975, Guy Tesseron compró el château y actualmente son sus dos hijos, Alfred y Gérard, quienes gestionan con verdadera pasión uno de los domaines más auténticos del departamento Haut-Médoc.
Château Pontet Canet reúne 80 hectáreas de viña sobre suelos pobres y profundos compuestos por gravas y arenas. La variedad predominante es la Cabernet Sauvignon (62%), seguida de Merlot (32%), Cabernet Franc (4%) y Petit Verdot (2%), con una edad media del viñedo de 45 años y una densidad de plantación de 9500 cepas por hectárea. Desde el año 2010, las viñas de Pontet Canet fueron certificadas BIO y desde entonces el uso de productos químicos ha sido excluido. El subsolado, arado y otras operaciones del suelo se llevan a cabo mediante el uso de caballos.
¿Qué particularidad tienen los vinos? Château Pontet Canet, son 300.000 botellas de un vino con personalidad, concentrado, equilibrado, potente y que compite con los grands crus de Burdeos. Para la elaboración de este vino, huyen de todas las técnicas modernas, atendiendo el grado óptimo de madurez en el viñedo por lignificación del raspón. El envejecimiento tiene lugar en barricas de roble francés (60%) durante un periodo de entre 16 y 20 meses, aunque actualmente ya han comenzado a hacer ensayos de vinificar en depósitos de hormigón en forma de huevo, siguiendo la idea de Michel Chapoutier. Por otro lado, han incorporado ánforas para la crianza de los vinos ya que creen que éstas aportan al vino cierto carácter mineral; una teoría acertada y como muestra no hay nada mejor que probar los vinos de Occhipinti en Sicilia con la variedad Nero d'Avola para encontrar la mineralidad.
