Microbio Wines is a winery in Nieva, Segovia (Spain), which through its ancestral knowledge creates authentic natural wines with soul. It is a family project that Ismael Gonzalo, Ossian's co-owner and winemaker, started in 1998. The philosophy of this subway winery is to make good wines, enjoy them and share them, as opposed to a systematic policy of mass production and marketing.
The vineyards of Microbio Wines
Its vineyards, which have passed through the hands of more than five generations, are spread throughout the town of Nieva. Some pre-phylloxera, organic farming, soils of siliceous sands, gravels and boulders at an altitude of 915 meters, and continental climate.
Always in search of balance, this winery does not use any additives for winemaking, the fermentation of the grapes is spontaneous, with the vineyard's own yeasts, and minimal intervention, to generate harmony in the ecosystem.
Their wines are faithful representatives of the different vintages, whether Atlantic or Mediterranean. In order to guarantee better conservation, they use a very low dose of SO2 before bottling.

Their organic farming and biosynergies result in a natural wine full of personality, authentic, fresh, without losing the varietal character and without masking the fruit. Among their favorite bottles we can find MicroBio Rack, Correcaminos, La Banda del Argilico, MicroBio Nieva York Pét Nat, Microbio Afinador de Estrellas, Microbio Correcaminos Rosado, all from 2019, and on the other hand, Microbio and Microbio Brutal, both from 2018. The wines carry with them a philosophy of life, a way of understanding existence and a legacy for the next generations.
