In the heart of the Champagne region, the Chevreux Bournazel winery is a unique and courageous project in a sea of vineyards dominated by monoculture and large corporations. This winery, unlike many in the region, does not come from a long family tradition in viticulture. Its founders, Stéphanie Chevreux and Julien Bournazel, are champenoise by birth, but their families were not involved in vineyards or wine.
However, their passion for the land and viticulture led them to form a viticulture services company, lending their expertise to wineries throughout the region. Stéphanie is also a teacher at the Crezancy wine school.In 2002, Chevreux and Bournazel seized a great opportunity to acquire a small vineyard in the village of Connigis, in the westernmost part of the Marne Valley. This vineyard, known as La Parcelle, became the heart of their winemaking project.
Vineyards
La Parcelle, with its 0.30 hectares, is characterised by a southern exposure and a 45% slope, unusual conditions in Champagne that make it unique. The terroir of this small plot, together with the climate of the region, contributes to the uniqueness of their wines. In 2016, they acquired a second vineyard in the Surmalin valley, increasing their production to approximately 3,000 bottles annually. These vineyards are dedicated to growing Pinot Meunier, a variety that reflects the essence of their terroir.
Philosophy
The philosophy of Chevreux Bournazel is centred on making handcrafted champagnes with minimal intervention and a deep respect for nature. Since their first vintage, they have been committed to chemical-free viticulture, obtaining certification in biodynamics in 2015. Vinification and ageing are carried out in barrels, with no external additions, except for small doses of sulphur dioxide. This approach highlights the uniqueness of each plot and maintains the pure essence of the grape.
The production of Chevreux Bournazel is a true expression of love and respect for the terroir and the Champenoise tradition. With limited production and a focus on quality over quantity, their champagnes are a reflection of the passion and dedication of their creators.
