Cillar de Silos is a winery full of history that owes its name to the intention of honouring the monk of the Monastery of Silos, who was called by the name of Cillar, being the one who was dedicated to the arrangement of the food and wine pantry of the religious.
The Aragón García family were the first to open this winery in 1994, and they also chose to use this sonorous name, not only to designate the winery but also the wines produced. However, the story begins in 1970, when Amalio Aragón began to lay the foundations of this winery, starting with the purchase of small plots of high quality vines, with the sole purpose of making his dream come true, which was to become a winegrower. 24 years later, together with his sons, he managed to found the Cillar de Silos winery and a year later he obtained the fruits of his first harvest.
Cillar de Silos is organised in small plots, and it also has an underground cellar dating from the end of the 16th century that determines the unique flavour of its wines.
One of the elements that characterise this winery are the natural conditions in terms of humidity and temperature, which remain constant throughout the year and are therefore ideal for guaranteeing the ageing process of the wines without the risk of any alteration occurring.
Techniques used
The wines of this winery are made with the Tempranillo grape variety, an autochthonous species characterised by its great personality and versatility. The name of this type of grape is a diminutive of early, as it is a species that ripens earlier than most red varieties.
The growers of this winery select the fruit very carefully to make their wines, always ensuring that the quality of the grapes is optimal. The grapes are then taken to the winery, where they go through a selection table to the vatting process, after which they are subjected to cold maceration or fermentation.
During the ageing phase, the wines of this winery are kept in French oak barrels for a period of between 13 and 18 months. During this period of time, we try to avoid excess wood in the must, in order to maintain its fruity character and its own personality.
