Vineyards
The Cota 45 vineyards explore the diversity of the albariza soils in the Sanlúcar region. Ramiro manages several pagos, which are specific plots where the microclimate and soil characteristics vary significantly, from the coast with cooler, more varied soils to the interior with more homogeneous, warmer conditions.
The winery owns and leases several hectares, and also buys grapes from local growers, which allows it to have precise control over the quality and character of the grapes. This meticulous vineyard management reflects its commitment to the expression of terroir and the authenticity of each vintage.
Philosophy
Cota 45' s philosophy is focused on producing wines that reflect the terroir and personality of each plot and vintage. Ramiro Ibáñez uses winemaking techniques that respect the integrity of the grape and the natural expression of the wine. His wines are divided into three main categories: organic, oxidative and sweet wines.
Organic wines: These wines, under the brand name UBE, are vintage white wines, in the style of the old manzanillas, made without head and with an ageing process under flor that seeks to highlight the character of the terroir.
Oxidative Wines: Under the Agostado brand, these wines are made using traditional techniques that include brief exposure of the grapes to the sun and spontaneous fermentation in oak butts, followed by static ageing to develop a complex profile deeply rooted in local tradition.
Sweet Wines: The Pandorga brand includes wines such as Pedro Ximénez, where the grapes are sunned longer in warm vintages to preserve the acidity and express the natural sweetness and concentration of the fruit.
Cota 45 's leitmotiv is to produce wines that are a window to the past, to a time when, according to Ramiro, "people worked by empirical conviction". This translates into wines that not only reflect their time and place, but also seek to recover and preserve the almost forgotten traditions of Jerez viticulture.
