Vineyards
The Emidio Pepe winery has 15 hectares of vineyards, distributed in small plots around the winery in Torano Nuovo. A distinctive feature of these vineyards is the use of the traditional Pergola cultivation system, which protects the grapes from the intense summer sun, maintaining freshness and allowing for balanced ripening.
The terroir of the region is exceptional, with clay-limestone soils that facilitate optimal drainage and allow the roots of the vines to dig deep in search of nutrients, bringing a marked minerality to the wines. The climate, influenced by the proximity to the Adriatic Sea and the Gran Sasso mountains, offers a perfect combination of sea breezes and mountain currents, creating ideal conditions for vine growing.

The winemaking process in the winery is meticulous and manual. The grapes are harvested by hand, carefully selecting the best grapes. The white grapes are trodden with the feet in large wooden vats, a traditional method that allows a gentle extraction of the must, preserving the integrity of the skins and the natural aromas. Red grapes, such as Montepulciano, are manually destemmed using nets, ensuring that the bunches remain whole and that the natural yeasts present on the skins, essential for spontaneous fermentations, are preserved.
Fermentation takes place in glass-lined cement vats, without the intervention of selected yeasts or added enzymes. The cement, a neutral and inert material, allows the wine to evolve without external influences, preserving its genuine character. Furthermore, the winery does not use oak barrels, thus avoiding the incorporation of woody notes and allowing the wine to fully express the characteristics of the grape and the terroir .
