At sight, they are wines of a dark red and well dyed tear coloration by its high content in Anthocyanins (color additives). By smelling these wines give off fragrances of black fruit in liquor, jelly, black olives, smoky notes, sweet spices and wood. By tasting these wines are usually fleshy, sweet, tannic, hard, rough and astringent in youth.
Due to its high alcohol content between 14 and 15.5ºC (57.2 and 59.9ºF), it is recommended to drink it at around 16ºC (60.8ºF) if you want to avoid pungent sensations of alcohol and bitter and astringent tannins. They usually accompany grilled or stewed meat with intense sauces based on red wine; big-game hunting and ripened cheeses e.g. Parmesan type.
In Jumilla with the variety Monastrell, Ribera del Duero with Tinta Fina and Priorat with Cariñena and Grenache are the best everlasting wines of race. In France, we must not forget areas such as the South Rhone, French Southwest and Languedoc with the varieties Syrah, Garnacha, Malbec, Mourvèdre and Cabernet Sauvignon among others. In Portugal, the great wines with body and soul of the Douro with the varieties Touriga Nacional, Tinta Roriz, Tinta Amarela, etc.
