Pago de Carraovejas is located in Peñafiel, in the heart of the prestigious Ribera del Duero appellation, one of Spain's most important wine regions. The winery sits on the slopes of the Duero Valley, surrounded by an exceptional terroir that has witnessed the evolution of this winery since its foundation in 1987.
The incorporation of Pedro Ruiz, José María's son, in 2007, brought with him a fresh and entrepreneurial vision, opening a new stage in the winery's history. Pedro introduced fundamental pillars such as sustainability, innovation and wine tourism, consolidating Pago de Carraovejas as a reference winery in Ribera del Duero. Under his leadership, the winery has received multiple awards, including Entrepreneur of the Year in 2017 by the University of Valladolid and Business Family of Castilla y León in 2016.
Vineyards
The Pago de Carraovejas vineyards extend over more than 200 hectares, situated in a privileged location at an altitude of 850 metres above sea level, with soils that combine calcareous, clay and alluvial components. This diversity of soils, together with a moderate mesoclimate due to the proximity of the Duero River, creates a unique environment for vine cultivation. The vineyard enjoys cold winters and hot summers, which allows the grapes to ripen slowly and evenly.
The main varieties grown are Tinto Fino (Tempranillo), Cabernet Sauvignon and Merlot, with a focus on precision viticulture. This modern technique, combined with traditional cultivation methods, allows for a meticulous management of each plot, optimising the quality of the grapes. The cultivation systems used include the Double Cordon Royat and the vertical axis, adapted to the orography of the terrain, which in some cases has slopes of over 20%, forcing the creation of terraces.
The vineyards are equipped with anti-freeze milling and irrigation systems to protect the grapes from spring and autumn frosts, thus guaranteeing a constant, high quality production. The constant renewal and adaptation of the vineyard, together with the commitment to sustainability, reinforces the long-term vision of Pago de Carraovejas.

From the vineyard to the winery, every step of the winemaking process is designed to maximise quality and preserve the essence of the terroir. The aim is to produce wines that are not only technically perfect, but also convey emotions, reflecting the unique character of the Peñafiel hillsides.
One of the most innovative aspects of the winery is the use of gravity in the winemaking process, which allows for a more delicate treatment of the grapes. The grapes, harvested by hand and transported in boxes, go through a rigorous selection process on the table before being taken to the fermentation tanks by means of a system of conveyor belts and small OVIS. This gravity transport system avoids the use of pumps, preserving the grapes' natural aromas and flavours to the maximum.
Fermentation takes place in a combination of stainless steel tanks and French oak vats, where the wines undergo controlled macerations to extract the maximum aromatic and structural potential. The winery has also developed an R&D programme in collaboration with experts in microbiology, which has allowed them to select and cultivate their own strains of yeasts and lactic bacteria, bringing a touch of uniqueness and differentiation to their wines.
The ageing process takes place in French and American oak barrels, where the wines age patiently until they reach their maximum expression. Depending on the style of the wine, the ageing period varies, but always with the aim of achieving maximum complexity and elegance.
In addition to its focus on quality, Pago de Carraovejas has positioned itself as a pioneering winery in the use of innovative technologies to improve both production and environmental impact. The research project on the use of mycorrhizal fungi is an example of the winery's commitment to sustainability.
