Champagne is the most distinguished sparkling wine in the world and in the region of France where it is produced. It is made according to the traditional champenoise method.
Since 1818, the couple Nicolas-François Billecart and Elisabeth Salmon founded Champagne Billecart-Salmon a house that produces this unique drink located in the village of Mareuil-sur-Aÿ in the north of France.
Champagne Billecart-Salmon was born as a family-run organisation and remains so today with the seventh generation of Mathieu Roland-Billecart overseeing the business.
The seventh generation of the family, represented by Mathieu Roland-Billecart, runs the winery, supported by Antoine, Jean and François Roland-Billecart Alexandre Bader.
This family group ensures that the essence and know-how handed down from father to son is preserved.
Use of biodynamic methods and techniques.
The Billecart-Salmon winery has focused on managing its vineyards with the utmost respect for the environment. In accordance with this premise, the winery uses biodynamic principles, avoids the use of pesticides and herbicides, raises awareness of the indiscriminate use of water, and reduces the use of boxes and other non-essential packaging.
In the cellar, the must is racked twice, a practice that was revolutionary for champagne when the winery began to do so.
The wines are aged in oak barrels underground in the limestone cellars, the oldest of which are reserved for grand cru cuvées.
At Billecart-Salmon, ancestral methods of champagne making are preserved, which, coupled with respectful practices in the field, led to the certification of "Sustainable Viticulture in Champagne" in 2017.
Billecart-Salmon's sparkling wines are characterised by a slower fermentation than conventional fermentation. This favours more airy and delicate aromas, along with the mastery of different vinification temperatures that contribute to preserving their unique freshness, limpidity and purity.
The grapes
Most of the grapes used for vinification come from around Epernay, where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay coexist in the significant vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.

Billecart-Salmon, a winery located in the village of Mareuil-sur-Aÿ, owns about 100 hectares of vineyards.
By 2020, production expanded with grapes coming from 300 hectares spread over 40 crus of Champagne, from the Côte des Blancs to the Montagne de Reims and the right bank of the Marne.
The vineyards are overseen by Denis Blée along with fifth generation Jean Roland-Billecart and sixth generation François Roland-Billecart and Antoine Roland-Billecart.
