Peixes is the new project of organic wines made from a minimum intervention and total respect for the land, carried out by Jesús Olivares and Curro Bareño. The winery, which has about five hectares of vineyards, is located in Viana do Bollo, Ourense (Galicia).
Peixes Vineyards
The Peixes vineyards, with five hectares located in Viana do Bollo, Ourense, are located at a considerably higher altitude than the regular vineyards, being one of the highest vineyards in Galicia, ranging from 600 to 850 meters above sea level. This is a very cold area for grape production, which means that the grapes do not ripen easily.The plots are varied, some with granitic soils, with a high concentration of mica and orange quartz, settled on stone terraces. These are old vines, which in some cases can be 60-80 years old. The grapes grown are the native red varieties Mencía, Mouraton, Grao Negro, Garnacha Tintorera, Bastardo and Sousón, as well as the white varieties (although to a lesser extent) Godello, Dona Blanca, Colgadeira and Palomino.
The viticulture is carried out following the principles of organic agriculture, with absolute respect for the land. Three of the five hectares that make up the winery are farmed by themselves, without using chemical products or additives, and the other two are farmed by winegrowers under their strict supervision.
Wines of Peixes
With their philosophy of maximum respect for the soil and minimum intervention during the winemaking process, they create elegant and fresh wines, made from traditional varieties of the area. Three rules are followed in the winemaking process: whole bunches are used, long macerations are carried out and the wines undergo cold fermentations with indigenous yeasts. Finally, the wine is neither filtered nor clarified.As a result, expressive and authentic organic wines are obtained, among which the 92 Parker Points Parker Peixe Da Estrada 2017 crianza red wine is noteworthy, deep and complex, along with the fruity and juicy Peixes Camándula 2017.
