Vineyards
Egly-Ouriet 's vineyards cover approximately ten hectares in the Grands Crus of Ambonnay, Bouzy and Verzenay. The average age of the vines is 40 years, which indicates exceptional maturity and depth in the grapes. These vineyards are planted mainly with Pinot Noir (two thirds of the total) and the rest is divided between Pinot Meunier and Chardonnay. The soils are clay-limestone, typical of the remarkable Grands Crus of France, and face south-southeast, which favours optimal ripening of the grapes. Viticulture is carried out using sustainable methods, reflecting a deep respect for the land and the terroir.
Philosophy

Francis Egly, since 1995, has varied the proportion of barrels from 1 to 5 years for wine ageing, allowing each terroir to express itself uniquely rather than following an unchanging recipe. Since 1999, they have avoided malolactic fermentation to preserve the freshness of the wine. In addition, disgorgement dates are mentioned on the back labels, a practice that underlines transparency and care at every stage of production.
Unlike many Champagne houses, Egly-Ouriet ages its champagnes for four years and its millésimé beyond six years, following the philosophy of Francis and his father Michel to patiently accumulate a treasure that allows them to market their champagnes with exceptional maturity. Production is very low, around 100,000 bottles depending on the year, which ensures a focus on quality over quantity.
