Brasserie Ammonite is located in the heart of Burgundy, France, specifically in the small village of Sennecey-le-Grand. This unique winery, founded in 2018 by Simon Lecomte, is located in a 17th century barn attached to his family home.
Despite its modest appearance, with equipment that looks like something out of another era, such as a converted milk tank and a 40-year-old bottling unit, Ammonite has become one of France's most sought-after brewers. The winery is named after an ammonite fossil found by Lecomte in his barn, symbolising the deep connection between the land and the production of his beverages. Ammonite's first beer was released in spring 2019, ushering in a new era of brewing beers with the soul of wine.Simon Lecomte, the current vigneron, is not only known for his beard and tattoos typical of a brewer, but also for his dedication to winemaking and teaching winemaking techniques at the specialised La Viti de Beaune. Although Lecomte does not come from a family of winemakers, his great knowledge and passion for wine was influenced by his great-grandfather, Hippolyte Cortot, a wine expert, and his mother, who passed on to him the art of wine tasting.
Although Brasserie Ammonite does not operate vineyards in the traditional sense, its focus on terroir is evident in the selection of ingredients and in its winemaking process. The winery benefits from Burgundy's rich terroir, using local water that is dynamised prior to use to maximise starch solubilisation and promote enzymatic activity during brassage. This attention to detail extends to the selection of the barrels, some with histories dating back to 1918 which are chosen for their ability to age and mould the beers in the style of the great wines, allowing for ageing of up to three years.
The cellar uses two types of rooms for brewing: one dry and two wet rooms under the house, which affect the evaporation of water and alcohol differently, creating beers with different profiles, from very dry and "edgy" to more opulent and sweet.
