Domaine No Control is Vincent Marie's natural wine cellar located in the north of the Puy de Dôme, in Volvic, Auvergne (France). Since 2013, this winegrower has been working the vineyards to convert them to fully organic farming. His experience working alongside Patrick Meyer has enabled him to learn about biodynamics, something he puts into practice on his own plots.
No Control Vineyard
The winery has five hectares of vineyards with various grape varieties: gamay, pinot noir, syrah, chardonnay, sauvignon, sylvaner and pinot auxerrois. The terroirs, where they are settled, were born from volcanic activity, and this is transmitted in the mineral taste of their wines. Here, nature is in the foreground, and they work with respect for the biodiversity of the countryside. From the living beings, the plants, the soil, to health. Vincent grows grass and generates mineral and organic matter, essential for plant strength and soil structure. He also works with Michel Augé's mare, Praline, to practice animal traction.
In this winery, sulphur and copper are used, but in a homeopathic way. Herbal infusions and decoctions are added in order to be as natural as possible, as Demeter's technical specifications indicate. The natural characteristics of their plots are diverse: they range from biotite-rich granite soils, Oligocene calcareous-clay based soils of black dust, basaltic scoria, to granitic sand from the erosion of volcanic rocks. No Control is a set of powerful, lively and valuable soils, full of history.
No Control wines
They make between five and seven cuvées, and no chemicals are added during the vinification process. No filtering or sulphites are added before bottling. The grapes are harvested by hand in 18 kg crates, an important process to avoid crushing. The whites are pressed slowly and carefully, while the reds are placed in vats with whole bunches for maceration.Among his favourite bottles, we can find the ancestral and crazy gamay, No Control Bullette Dans Ta Tête 2016, the No Control Fusion 2017, another fruity and juicy gamay, No Control Rockaille Billy 2017 and the captivating No Control Magma Rock 2019. Also, the young red No Control La Sousouleuse 2019, ideal for a romantic dinner. The wines are fermented with indigenous yeasts and aged on lees in different containers. The important point here is the length of the ageing. There is no set time, but it will be left to evolve naturally until it is considered ready. This will depend on the wine, its taste and its potential. The aim is to make aromatic, pure, fresh, generous and very drinkable wines.
