Patrick Piuze was born in Quebec, Canada, in 1973 in the bosom of humble family that has never had any relationship with the wine world. At the age of 18, Patrick meets Marc Chapoutier who became his mentor in his wine experiences from that moment on. Patrick Piuze starts travelling through Australia, Israel and South Africa where he will learn on wine making techniques… He is then a diamond in the rough that in the coming years will draw the attention of many French wine specialized critics such as Jancis Robinson or John Gilman.
Patrick returns to his home town where he will spend some years of slumber; all genius need some rest sometimes to clear their mind. Where should he go? What should he do? In the meantime, he sets up a wine shop called “Le Pinot Noir”.
During the 2000 summer, Patrick Piuze resolves to pack up and fly to Burgundy to, who knows when, bring about a tremendous project. Thereupon his first contact in Burgundy is at Domaine Olivier Leflaive where he will carry out his first harvest at the Puligny-Montrachet vineyards. After a brief training at CFPPA in Beaune, Olivier Leflaive put his trust in Patrick to vinify his Chablis wines. He was developing his business talent for the following 4 years at the maison Olivier Leflaive, until he received a work offer from maison Verget, where Jean-Marie Guffens conveys him his passion for terroir. From that moment onward Patrick Piuze became an acclaimed vigneron whose popularity led him to being recruited the following year by maison Jean-Marc Brocard as wine cellar headman.
Then in the summer of 2008, Patrick made the most important decision of his life, founding his own maison de négoce and setting at Chablis commune on his own account.
Patrick's philosophy is to search out the best Chablis plots and express each one's terroir in every wine, which would be labelled after the parcel; this region has about 3.800 hectares distributed in municipal registrations of origin Premier Cru and Grand Cru. Over the years, Chablis region has developed a cooperatives bias and most of the harvests are carried out mechanically.
Since 2008, Patrick Piuze leases different vineyards and accomplishes viticulture extremely free from synthetic products and a good soil work. He produces the following wines: one Petit Chablis from a plot near the Grand Cru Les Clos with an extraordinary purity that might overcome some other producer's Premiers Crus; four wines AOC Chablis lieu-dit known as Terroir de Fyé, Terroir de Chichée, Terroir de Chablis y Terroir de Courgis; six Premier Cru wines, where the most interesting ones are Vaillons Les Minots, Fourchaume and Montée Tonerre , though very different among themselves; and seven Grand Cru, the best of them are doubtlessly Bougros Côte de Bouqueyreaux, Les Preuses and Les Clos.
Most of the wines are usually fermented in old oak barrels, except some cuvées and depending on the climate of the year that are partially fermented in stainless steel. All of them are bottled without any filtering.
