The Bruno Paillard winery is located in the prestigious town of Reims in the Champagne region of France. Founded in 1981 by Bruno Paillard, this winery is relatively young compared to other Champagne houses, but has quickly established itself as one of the leading producers in the region.
Bruno Paillard began his career as a Champagne wine merchant in 1975 and, with his passion and dedication, decided to create his own Maison de Champagne. Today, the winery is run by Alice Paillard, Bruno's daughter, who has continued the legacy of excellence and quality that characterises this house. Alice has worked in other relevant wineries, acquiring experience and knowledge that she now applies at Maison Bruno Paillard.Vineyards
Maison Bruno Paillard owns vineyards covering an area of 25ha, which represents 50% of the grapes it needs. These vineyards are composed of 89 individual plots, including 19 Crus (six Grand Crus and five Premiers Crus). Most of these plots are located in the predominantly limestone terroirs of Champagne, such as Montagne de Reims, the beginning of the Marne Valley, Côtes des Blancs and Les Riceys. The geographical location, the orientation of the plots and the nature of their soils determine which varieties are planted where. The plantings comprise: 50% Pinot Noir, 37% Chardonnay and 13% Pinot Meunier. The average age of the Maison's vines is 32 years. The viticulture practised is sustainable, without the use of herbicides or pesticides, and the vineyards are certified organic.
Philosophy
Bruno Paillard's winemaking is characterised by its quest for purity and elegance. Only the juice from the first pressing is used, and vinification takes place in 96 stainless steel tanks and 400 barrels. Alcoholic fermentation takes place in open tanks or in small oak barrels. Malolactic fermentation is allowed, resulting in pure, elegant and unaltered wines. The house practices the art of blending, and between January and Easter, the blends are prepared. Bruno Paillard's Champagnes age much longer than required by the appellation, from three years for the Première Cuvée to eight to ten years for the N.P.U. - "Nec Plus Ultra". The "disgorgement" date is so important that Bruno Paillard was the first Maison to print it on the back label of each bottle since 1983. All Bruno Paillard Champagnes are Extra Brut with a very low dosage, maximum 6 grams per litre.
