Let's talk about their history
Josep Mata Capellades started producing sparkling wines at this winery in 1924. At that time he decided to name the winery after his father, the distinguished Recaredo Mata Figueres.
Nowadays, the winery is run by Mata Capellades' sons, Josep and Antoni Mata Casanovas, who with their effort and hard work have managed to position this winery as a pioneer in the production of dry wines.
Techniques used
The Cava Recaredo winery begins the process of making these wines by cultivating all of its hectares, ensuring minimal intervention in the process, as its aim is to guarantee the balance of the vines and respect for the environment. This is because it demonstrates that the expression of the fruit is authentic.
Nor does it include the use of herbicides or insecticides in the plantation, as it considers that, in order to maintain the naturalness of the process, only products of organic origin should be used.
The grapes used to produce the wines of this winery are grown in its own vineyards, applying organic and biodynamic cultivation techniques that guarantee the quality of the fruit.
One of the most relevant characteristics of these wines is that they are made without the addition of sugar in the fermentation process, and their ageing in the bottle is extensive, which determines the peculiarity of their texture.
The bottling is carried out with natural cork and eliminating the concentrated yeasts through manual techniques, at room temperature, without applying cold to the neck of the bottle.
Vineyards
The vineyards of this winery are located in the surroundings of Sant Sadurní d'Anoia, divided between 6 estates called Cal Mota, Can Rossell, Pedra Blanca, Can Romeu, Moliner and Marçaneta.
The land of these estates is unirrigated, that is to say, the amount of water the plants need depends on the atmospheric rainfall, which is why planting is carried out at specific times of the year.
Within the Cavas Recaredo vineyards, approximately 50 types of grapes are grown, including Xarel-lo, Parellada, Macabeo, Chardonnay, Monastrell and Pinot Noir. Cabernet Sauvignon and Ull de Llebre are also included in the elaboration of the peculiar red wine called Els Raustals.
These lands are located at an altitude of 300 metres above sea level, which determines the particular flavour of each grape variety.

Recaredo wines are exclusive vintage elaborations, which are also distinguished by the particularity of their fermentation, as no sugar is included in this process, and for this reason they are defined as Brut Nature.
