The Bernard Baudry winery is located in Cravant-les-Côteaux (Chinon) France, in the Loire region of France. This winery does not have a long history of generations, as it was founded in 1975 by Bernard Baudry, who had studied at the Lycée de Beaune and worked as a vineyard consultant at the laboratory in Tours alongside Jacques Puisais.
Bernard started with only two hectares of vineyards, but thanks to his dedication and skill, he was able to expand to the current 32 hectares. His son, Matthieu, joined him in 2000 after studying in the Mâcon and Bordeaux area, and working in Tasmania and California. Matthieu has brought new ideas and techniques learned during his international experiences, complementing his father's traditional knowledge.Vineyards
Bernard Baudry 's vineyards extend over 32 hectares in the Chinon and Cravant les Coteaux AOCs. These vineyards are planted mainly with Cabernet Franc (90%) and a small proportion of Chenin Blanc (10%). The terroir is varied, with soils that include gravel on the plains, calcareous clay on the slopes and calcareous sands on the plateaus. This diversity allows for plot vinification, which means that the grapes from each plot are harvested and vinified separately to bring out the unique characteristics of each terroir.
The vineyards have been managed organically since 2006. No chemical herbicides are used, and phytosanitary interventions are mainly limited to the use of copper, sulphur and natural plants such as horsetail and nettles. Compost, made from cow dung and straw, is used to balance the organic matter in the soil. This environmentally conscious approach allows the vineyard to find its own balance of production according to the richness of the soil and the climate of the year.
Philosophy
Bernard Baudry 's winemaking philosophy focuses on plot vinification, where each plot is harvested and vinified separately to preserve the unique characteristics of the terroir. The grapes are harvested by hand, and only natural yeasts present on the grapes and in the winery are used for fermentation, avoiding any chemical or thermal corrector.
The red wines are vinified in cement, wood and stainless steel tanks, depending on the characteristics of the grapes. The wines are aged in cement vats for the smoother wines and in oak barrels for the more structured wines. During the ageing process, extractions and the use of sulphur are minimised, allowing the wines to fully express their origin and character.
The white and rosé wines are made from Chenin Blanc and Cabernet Franc respectively. Chenin Blanc, a variety native to the Loire Valley, is known for its ability to adapt to different soils and microclimates, and in Chinon, it is used to produce dry and still wines.
