The history of the Bonnet Ponson winery in winemaking is the story of six generations of this family since 1862.
The current style of winemaking is made without filtration, fermentation with natural yeasts, minimal use of sulphur, with an inclination towards "Champagne au naturel".
Location of the cellar
The Bonnet-Ponson Champagne cellar is located in Chamery, a Premier Cru location in Petit Montagne de Reims with property in Petit Montagne and Grand Cru locations in Verzenay under the AOC Champagne.
History
The history begins in 1862, with Grégoire Bonnet in Chamery with the production of Champagne. Subsequently, his successor Jules Bonnet bought new plots of land in Chamery and installed the technology of the time.
After the Second World War, Raoul Bonnet and his son André started the construction of the current cellar to store their small production.
In 1956, André Bonnet married Monique Ponson, from another family of winegrowers in the region, and the Bonnet-Ponson estate was created.
Other plots in the villages of Vrigny and Coulommes-la-Montagne then joined the Chamery vineyard, growing Meunier and Pinot noir in Chamery, Vrigny and Coulommes-la-Montagne.
At the end of the 1970s and for 30 years, his son, Thierry Bonnet, built new cellars and added new plots in the communes of Chamery, Vrigny and Verzenay.
It is in 2013, when winemaker Cyril Bonnet, the sixth generation of the family's producers, joined the family estate, and set in motion the conversion of the entire vineyard to organic farming, which is now certified.
This farming makes it possible to maintain balanced, self-sufficient vineyards and thus achieve lower yields and better quality grapes.
In the vineyard, the work is done manually using natural surface fungicides and homeopathic treatments with herbal teas from local plants such as nettles, horsetail and comfrey.
Vineyards
In the winery, the grapes are sourced from the family vineyards spread over five Premier Cru and Grand Cru villages in the Champagne region.
The family vineyard is made up of 50 small plots spread over the villages of Chamery, Vrigny and Coulommes-la-Montagne, classified as Premier Cru.
The Pinot Meunier variety has been planted on sandy soils. The Pinot Noirs are planted on clay soils, and the Chardonnay variety is planted on more calcareous soils, located on the upper parts of the hills.
The vines have been considered a family heritage for more than 150 years and a significant proportion of old vines have been preserved. Today, the vines are between 35 and 80 years old.
Techniques applied
Since 2013, winemaking has been using much more artisanal and less interventionist methods that respect the identity of the grape, eliminating oenological products and unnecessary modern technology.
The plots are vinified individually to maintain the qualities of each place and they do so with gentle pressing in vertical presses and letting the must flow by gravity to the fermentation tanks.
Fermentations are carried out naturally and the use of sulphites is kept to a minimum and is not even used in many wines.
On the other hand, the wines are matured for a minimum of 7 months before the second fermentation in the bottle and the ageing is done depending on the character of the wine.
Clarification is carried out naturally by gravity thanks to the cold of winter, so the wines are generally not filtered.
In other words, the winemaking of this renowned winery is planned with the idea of maintaining the ageing potential of the wine and reflecting its natural quality through careful and delicate methods .
