Let's talk about its history
Talking about the Domaine Matassa winery requires us to start by explaining who Tom Lubbe is. Basically, he is a New Zealander raised in South Africa, who in the 1990s began to take his first steps in viticulture.
It was before he realised that the ideal place to produce the most unusual wines was France, where he also met the daughter of Gérard Gauby, to whom he is now happily married.
After learning about the production of high denomination wines such as Gérard Gauby, the couple decided to buy some old Cariñena vines located in the village of Vivier, which, in addition to having optimal soils for the cultivation of this fruit, has an altitude that also has a positive effect on the flavour of these grapes.
This is how the Domaine Matassa winery was born, where its first harvest is also produced. This winery is characterised by working with old vines of diverse fruit , including Carignan, Grenache, Macabeo, Grenache Gris, Muscat of Alexandria and Muscat de Petits Grains.
These vines are defined as low yielding soils which translates into terroir driven wines.
Techniques used
The techniques applied in this winery are defined as biodynamic. The grapes are grown in soils where vegetation and minerals typical of this French area abound. The grapes are harvested by hand using traditional techniques that guarantee the quality of the fruit and that it arrives in whole bunches and is then pressed.
The resulting juice is macerated for a period of at least 15 days and then undergoes an alcoholic fermentation process in French oak vats, without the use of chemical products. These wines are aged for a minimum of 7 months in old barrels and then bottled unfiltered.
Vineyards
As mentioned above, this winery works with old vines to harvest Carignan, Garnacha Gris, Garnacha, Muscat of Alexandria, Macabeo and Muscat de grano menudo grapes.
It has a variety of more than 14 wines of different flavours and textures, which compete with each other to be the most peculiar and exquisite.

The wines of this winery are characterised by being aromatic and including in their nuances, diverse flavours of light and dark fruits with a special balance in their nuances of acidity and touches of spices, reminiscent of the tropics.
