Jean Foillard is the name of the man who has been managing this winery since 1980, and who has been the protagonist of its growth, achieving what is today a solidified project.
From the beginning, Jean followed the teachings of Jules Chauvet, one of the best known traditionalist winegrowers of this region, who together with three other winegrowers managed to join forces to rescue the old viticulture and winemaking practices of the Beaujolais region.
From the beginning, they have been dedicated to produce wines from old vines, trying to minimise the use of synthetic herbicides or any other chemical product that could alter the taste of the wine.
The wines of this winery are characterised by their high ageing potential, despite being young wines. They are not subjected to long periods of vinification before being marketed, but the permanence in the bottle promises the diner the enjoyment of a great experience.
The wines of this winery, which are on the market today, have a rustic structure combined with spicy notes and certain mineral tones.
Techniques used
In addition to using ancestral techniques in all the production phases of these wines, this winery applies late harvesting methods, and a rigorous classification of the harvested fruit. This is so that the grapes arrive healthy at the pressing stage and can be used to their full potential.
The vinification phase is carried out in old barrels from the best estates in Burgundy, with a minimum addition of sulphur dioxide and, in some cases, none at all. These wines do not undergo chaptalisation or filtration.
The result is wines that naturally express the terroir from which they come.

A large percentage of the winery's vines are more than 40 years old, and some are even more than 100 years old.
