Domaine Jean Pierre Grossot is located in the picturesque village of Fleys, east of the town of Chablis, on the right bank of the river Serein. This area is recognised as one of the most outstanding in the Chablis region.
The history of the domaine dates back to the 1920s, when Jean-Pierre's grandparents laid the foundations with hard work and dedication, passing on their love of viticulture to subsequent generations.In 1979, Jean Pierre and his wife Corinne formally acquired the winery after their marriage, when it had 10 hectares of vineyards. Over the years, they have expanded their land to 18 hectares, including parcels of Chablis Premier Cru such as Vaucoupin, Mont de Milieu, Côte de Troëmes, Fourchaume and les Forneaux. His daughter, Eve Grossot, joined the project in 2010, bringing a fresh and renewed vision to the family tradition.
The commitment to viticulture and respect for the land has been maintained over time, consolidating the domaine as one of the most respected in the Chablis region. This winemaking lineage represents not only a family legacy, but a passion shared by generations.
Vineyards
The terroir of the Grossot family vineyards is exceptional. The 18 hectares are distributed in privileged plots both in Fleys and in the surrounding area, encompassing renowned Premier Crus. The predominant soils in these areas are Kimmeridgian, a mixture of clay and limestone rich in marine fossils, responsible for the unique mineral character of their wines.
The vines, aged between 5 and 45 years, are mostly managed using the double Guyot pruning system. This traditional Chablis technique favours proper ventilation of the vegetation, minimising the risk of disease. Since 2018, after more than two decades of reasoned cultivation, the winery has gone a step further by adopting organic farming and obtaining Ecocert certification. This organic approach makes it possible to maintain the vitality of the soil and preserve the biodiversity of the environment.
The Chablis climate, with cold winters and warm summers, and occasional spring frosts, contributes to the formation of wines with lively acidity and complex structure.
Philosophy
Jean Pierre Grossot 's philosophy is centred on the pursuit of purity and authenticity in his wines. From manual harvesting to fermentation with indigenous yeasts, each step of the process respects the natural expression of the Chardonnay and the character of the terroir. Vinification is carried out in stainless steel tanks at low temperatures, which ensures a slow fermentation that enhances the aromas and flavours.
The Chablis Premier Cru are aged for up to 14 months in a combination of stainless steel tanks and multi-purpose barrels. This practice gives the wines additional texture and complexity without overshadowing their fresh, mineral essence. All the wines undergo malolactic fermentation, which gives them a rounder, more pleasing profile on the palate.
Since 2012, the winery's practices have evolved towards fully organic viticulture, integrating techniques such as the use of organic fertilisers and limited use of phytosanitary treatments. Sustainability is a cornerstone of the project, even using pruning waste to fuel a biomass boiler that heats the winery's facilities. Eve Grossot emphasised that organic farming has strengthened the vines, making them more resistant to disease and better able to withstand water stress conditions.
