Amaury Beaufort is the name of this winery and one of the sons of Jacques Beaufort, who history defines as the organic pioneer in Champagne. Beaufort is a winegrower who began his career in this art in 2003, after having studied oenology in Beaune.
Since 2018, he has been creating his own winery, which still manages to produce very special wines, as they do not contain SO2 and still use traditional techniques.
In this winery you can taste a wine with aromas and flavours of exotic fruits balanced with a hint of mineral character. On the nose and in the mouth you can appreciate yellow flowers and some citrus tones, leaving a chalky and fresh finish with an acidic structure.

Amaury Beaufort controls all the work of this winery, dedicating himself entirely to his hectare of vineyard. He manages a height of more than 2 metres of stakes, which allows a perfect maturation and concentration of sugars in the fruit.
His family tradition is not focused on the art of wine, however, he has extensive experience in the handling of other types of beverages, which has served him as a basis for directing this winery.
Techniques used
In the elaboration of this wine, the proximity to Burgundy is influenced, reflecting in its wines the touch of salinity. The grapes are grown on limestone-clay soils from the Kimmeridgiense.
After the fruit is harvested, the musts are fermented in barrels and then left to age in oval-shaped containers with a capacity of up to 15 hl. Fermentation is carried out with indigenous yeasts and spontaneously. The time that this type of wine is left in the barrel gives it enough time to settle.
The ovoid shape of the barrels has its reason for being, and that is that this design causes a natural movement of the lees, achieving a particular acidity. The use of barrels with thick soles has a positive influence and even the steam treatment prevents the wine from getting a woody or toasted taste.
The ageing for this type of wine is quite long, ranging from 11 months and 6 months in barrels to 12 months in barrels and 10 months in casks.
This wine does not undergo a filtration process nor is it subjected to cold for tartaric stabilisation.
Vineyards
This winery has only one hectare that is worked by its founder, applying rudimentary techniques that make this beverage a local and exquisite experience. The Pinot Noir grapes are harvested from this vineyard, which make up 80% of the grapes used in this wine, with the Chardonnay grapes making up 20%.
The wine that is marketed has different varieties with fruity, spicy and herbal touches. When tasted, the flavour is quite broad and lingers in your mouth for a long time.
