The Thymiopoulos winery has its roots in the village of Trilofos, where the Thymiopoulos family has been involved in agriculture and grape growing for generations. Apostolos Thymiopoulos, representing the new generation, was the first to vinify the family vineyards while studying oenology. In 2005, he produced his first wine called "Earth and sky". Apostolos is a firm believer in sustainable viticulture and minimal intervention throughout the winemaking process.

The vineyard is the link between the winemaker and nature. Apostolos Thymiopoulos, after years of experimentation, deeply understands the needs of the vine in its different phases. The winery emphasises balance in viticulture, helping its vineyards to find their own symmetry and creating an autonomous ecosystem. All its vineyards are farmed organically, following biodynamic practices selected after careful assessment of their impact on the vine. These practices allow the preservation of biodiversity in the vineyards.
The village of Trilofos is located in the southern part of PDO Naoussa. At an altitude of 100 to 220 metres, average temperatures are higher than in Fytia. Its heavier, limestone-based soils tend to produce riper, tannic and denser wines. Although the sea is 40 km away, there are no barriers preventing sea breezes from reaching the region.
Fytia is a unique part of PDO Naoussa that produces the most elegant expression of the Xinomavro variety in the region. The high altitude (400 - 650 metres) compared to the rest of the appellation makes the biggest difference in this area. The soils here are light, composed of schist and granite. Temperatures are low with a constant circulation of air from Mount Vermio.
Philosophy
Throughout the winemaking process, Thymiopoulos strives to represent the original expression of each vineyard and vintage. Choosing the right time to harvest allows them to have perfectly ripe, small, aerated and healthy bunches of grapes. Whether destemmed or not, the grapes begin to ferment with spontaneous yeasts, followed by a long period of maceration. The wine is then transferred to large oak barrels. Minimal intervention throughout the vinification and ageing process allows them to bottle an authentic expression of Xinomavro and its place of origin.
