Alphonse Mellot 's vineyards are located on the "Domaine de la Moussière", covering more than thirty hectares. Located on the south-western tip of Sancerre, these vineyards benefit from a chalky soil and a specific subsoil, ideal conditions for growing vines. The terroir of Domaine la Moussière is a gift from past generations, located in the heart of the appellation on Kimmeridgian soil, which gives way to the marbles of Saint Doulchard and the chalky soil of Buzançais. The Cenomanian soils are flinty clay and the Oxfordian soils are stratified chalk, differences that are delicately expressed in the winemaking.

The winemaking philosophy at Alphonse Mellot focuses on the expression of terroir and the creation of wines that are true works of art. Each wine develops distinct mineral characteristics, constituting a "memory catalogue" of soil and climatic conditions. This alchemy allows the minerals released from the soil to be absorbed by the fruit, thus better expressing the terroir. The winery produces Sancerre white wines from the Sauvignon grape, known for its small, very compact grapes and one of the oldest known varieties. Sancerre's red and rosé wines are made from the Pinot Noir grape, especially from the oldest vines of the 'Vieux Clos Chambrastes', a legendary vineyard located on the site of an ancient Roman camp.
