Alice and her husband Olivier de Moor have lived and worked in Courgis since 1994. This is a French town and commune located 10 kilometers southwest of Chablis.
There, perseveringly, they have been working with their wines and the varieties of chardonnay, aligoté and sauvignon.
Alice and Oliver de Moor have been farming their vineyards organically for more than 20 years and are very popular in Chablis. Their concern for their vineyards and their wines is remarkable and even the labels are drawn by Olivier himself.
A journey through a beautiful story of overcoming
Alice and Oliver are winemakers, and have acquired extensive experience, which they have put into practice in their vineyards and wines. In the beginning they had limited resources, so they had to take care of other winemakers' vineyards to make a living.
In 1989, they started planting 3 hectares of Chablis, 1 hectare of Aligoté and Sauvignon in the commune of Saint-Bris, then moved on to plant Chardonnay in the Bel-Air, Clardy and Rosette parcels, and finally Aligoté from which the first harvest was obtained in 1994.
In 1996, they planted a large plot in Chitry called Champagne with Aligoté and Chardonnay.
In 2002, for the harvest, they started to use small boxes where the grapes are not crushed by their own weight. Already since 2005, they started to work organically their vineyards.
Their winery was built in 2007, with a large structure and high ceiling, which allows them to do all their winery work by gravity.
Already in 2008, they acquired a second hand pneumatic press to treat the grapes in the most gentle way possible.
The soil characteristics of the vineyards Alice and Oliver work with are of adequate texture, structure, drainage and aeration to produce quality wines.
Organic viticulture
Alice and her husband, Olivier de Moor, believe in organic farming, healthy and respectful of life. In the winery, winemaking is done with natural fermentations and a minimum of intervention, indigenous yeasts and no pumping over with must transfer by gravity. In the winery, chemical inputs are prohibited, no filtration before bottling and the use of sulfur is almost nonexistent.
On the other hand, the wines are aged between 12 and 18 months in Burgundy barrels of different ages for Chablis and Bourgogne Chitry.
In this context, the young Aligoté vines are aged in cement and stainless steel tanks, and the Sauvignon Blanc grapes are fermented spontaneously with indigenous yeasts in stainless steel tanks.
This process has resulted in a selection of original and authentic mineral wines that are admired internationally.
