Guillemot Michel is a winery located on a family estate in Quintaine, between the villages of Viré and Clessé. The wines from this winery are characterised by the fact that the grapes are treated using biodynamic techniques, which not only keep the soil alive, but also allow the fruit to acquire the goodness of the soil, other plants and even the local fauna.
Let's talk about its history
The history of the Guillemot Michel winery began in 1982 when Pierrette Michel and her husband Marc Guillemot decided to train in the winemaking field in order to take over the management of the estate, which at that time belonged to Pierrette's parents. In 1985, already in the hands of the new family, the first batch of wines called "Guillemot-Michel" was launched on the market.
From that moment on, they began to work with organic vines and then became interested in applying biodynamic techniques, until they achieved the certification that defines these wines as natural. In 2012, Sophie, the couple's daughter, decided to join the management of the winery, together with her husband Gautier, and managed to take over the complete management of the estate, which she has maintained until now.
Techniques used
The techniques carried out from the cultivation, besides trying to maintain a living soil and avoiding the addition of chemicals, include the addition of mineral substances and herbal mixtures.
When the fruit arrives at the winery, the intervention of the winery is minimal, as the optimum quality of the harvest is guaranteed during the harvesting phase, ensuring that the grapes are picked by hand as well as being at the key point of ripeness. The grapes are then gently pressed to extract the juices.
Once the musts have been extracted, they undergo a cold decanting phase during the night, in order to separate the clear juices from the lees. After that, the wine undergoes alcoholic and malolactic fermentation with indigenous yeasts and bacteria in concrete barrels. After fermentation, the wine is left to rest on its lees until it is bottled at the beginning of summer.
Vineyards
The vineyards of this winery are over 6.5 hectares located in the south of Burgundy, near Quintaine. They are composed of Jurassic limestone subsoils, which have an atypical characteristic due to the relief of Quintaine, which experts define as a phenomenon that generates a high density of summer storms. This in turn leads to an accelerated decarbonisation of the limestone into silt.
The consequences of this phenomenon lead the winegrower to increase the addition of water during the summer season, which contributes to the fruit providing a better natural acidity to the wines made from them.
In addition, there is a decrease in the active limestone index, favouring this phenomenon in the establishment of the vine, which in turn modifies the structure of the wines.
Natural wines
The wines of this winery are classified in different cuvée, one of these is defined as the historical "quincena", which corresponds to the plots located in the area around the estate. Another of these is "Volver a la tierra", which is characterised by being vinified in terracotta vats. "Charlestón" corresponds to the centenary vines, and finally there is "una burbuja", where a very particular sparkling wine is produced, as its method of elaboration is ancestral.
