Dominique Derain, is a Burgundy wine expert widely known for his valuable consultancies. He bought with his wife 5.5 hectares of vineyards in Saint-Aubin, France in 1988 and has always followed the principles of biodynamic viticulture. Although he is no longer the owner, he is still involved in the vineyard and the winery.
Its founder
Dominique Derain, born in Hospices de Beaune in 1955, is awine connoisseur who trained as a barrel maker. In 1988, he bought a vineyard estate in Saint-Aubin, France and has followed the principles of biodynamic viticulture ever since.
Dominique produces around 20,000 bottles a year, most of which are sold in France. His wines are highly valued and appear on many wine lists in elegant restaurants in Paris.
In December 2016, Julien Altaber, who had worked with Dominique for a long time, and Carole Schwab, who had also worked with Dominique in the management of the winery, bought the business from him.
Julien, in addition to working for Dominique, had set up his own winery, Domaine Sextant, some years earlier. Initially, he made the Domaine Sextant wine in Dominique's cellar, so the transition of ownership from Dominique to Julien and Carole was a natural process.
Although the ownership has changed hands, Dominique still has a strong relationship with the winery and the vineyard and, as mentioned above, the wines will continue to be sold under the Dominique Derain name. Although he no longer has the main responsibility, he is still a mentor and is present on a day-to-day basis.
Wines, and his philosophy
Dominique Derain's wines are made following a natural and biodynamic process, which means that few chemicals are used and as little intervention as possible in the production process. These wines use indigenous yeasts, i.e. yeasts found naturally on the grapes, rather than artificially selected yeasts.
Moreover, fermentation is spontaneous, which means that it is left to occur naturally, as previously mentioned, without the addition of external yeasts. Finally, Dominique Derain wines are aged in French oak barrels, which gives them a distinctive taste and aroma.
Some of Dominique Derain's most outstanding wines are Allez Goûtons (non-vintage white), Derain Saint-Aubin le Cru En Remilly and Derain La Combe Bourgogne Blanc (aged white), Derain Bourgogne Les Riaux (young aged red) and Derain Gevrey-Chambertin En Vosne (reserve red).
