Cascina degli Ulivi is located in Novi Ligure, in the Piedmont region of Italy. This winery was founded in 1977 and since its inception has been committed to the production of natural wines.
The founder, Stefano Bellotti, began his journey into the world of wine at the early age of 18. Over time, Stefano became a passionate advocate of biodynamic agriculture, adopting this method in 1984. Over the years, Stefano Bellotti has been recognised as a pioneer and leader in biodynamic viticulture, and his legacy lives on in the winery.Vineyards
The Cascina degli Ulivi winery extends over 22 hectares of vineyards. These vineyards benefit from a unique terroir, characterised by clay and calcareous soils. The region's climate is typically continental, with cold winters and warm summers, providing ideal conditions for vine cultivation. The main varieties grown by the winery are Cortese, Dolcetto and Barbera, but they also have varieties such as Chasselas, Ancellotta, Sauvignon Blanc, Gewürztraminer, Timorasso, Bosco, Verdea and Riesling italico.
Philosophy
Cascina degli Ulivi focuses on the production of biodynamic wines with no added sulphites. The winery strongly believes in accompanying the natural process of the wine in its evolution. They do not use selected yeasts, enzymes or any other oenological additives in their winemaking process. Each wine is treated in a unique way, choosing a different type of vinification to best interpret the grapes. The vinification of both white and red wines is carried out without the addition of SO2 (sulphur). All their wines contain less than 40mg/litre of sulphur. In addition, the winery has made a significant effort in the ageing of the reserves of its most important wines, offering to the market bottles that are true jewels.
As for the wines, the winery produces a variety of red and white wines. Some of the white wines include Semplicemente Bianco, Filagnotti, Montemarino, La Merla Bianca and C'era una volta il Passato. The red wines include Semplicemente Rosa, Semplicemente Rosso, Nibiô, Nibiô Pinolo and Mounbè. Each wine is a unique expression of the terroir and the winery's biodynamic philosophy.
