Originally a history and geography teacher, his love of wine led him to change direction in 2003. He was profoundly influenced by the wines of Eric Pfifferling of Domaine de l'Anglore, which prompted him to leave his teaching career and dedicate himself entirely to viticulture. To hone his skills, he served an apprenticeship at Domaine Vieille Julienne in Orange, where he acquired in-depth knowledge of vineyard management and exemplary viticultural practices.
In 2006, Nicolas founded Clos des Grillons with a small plot of vines. Thanks to the support of renowned producers such as Eric Pfifferling and Jean-Paul Daumen, his winery grew rapidly. Today, Clos des Grillons is a beautiful domain composed of multiple plots of vines, cultivated with care and dedication under organic and biodynamic farming principles.
Vineyards
Clos des Grillons covers 18 hectares of vineyards located in the Côtes-du-Rhône and Côtes-du-Rhône-Villages-Signargues appellations. The soils of this region are varied and rich in minerals, which contributes to the complexity and quality of the wines produced.
The terroir of Rochefort-du-Gard is characterised by clay and calcareous soils, ideal for viticulture. The Mediterranean climate, with mild winters and hot summers, provides the perfect conditions for growing vines, favouring optimal ripening of the grapes.
At Clos des Grillons, we work mainly with traditional grape varieties from the region. For the white wines, varieties such as Bourboulenc, Grenache Blanc, Clairette, Viognier and Muscat à petits grains blancs are cultivated, creating a profile of fresh, complex and distinguished wines. Among the red grapes, Garnacha Tinta, Cinsault, Mourvèdre, Carignan and Syrah are used to produce crisp, fruity and fresh reds, with a particularly pleasant, supple and aerial character.
The average age of the vines is around 50 years, with some hundred-year-old vines planted in 1901.
