This Burgundian jewel is the result of Jadot 's deep respect for the terroir and its commitment to expressing the purity of the nuances of each plot. The Estournelles-Saint-Jacques vineyard, facing south and located just above Lavaux Saint-Jacques, on the Combe de Lavaux fault, offers a privileged setting: calcareous-clayey, steep, stony soils, geological heirs of the great nearby crus such as Chambertin and Mazis-Chambertin. Here, Pinot Noir finds a unique balance between power and precision.
Winemaking
After a rigorous manual selection, the grapes destined for the Louis Jadot Gevrey-Chambertin 1er Cru Estournelles Saint-Jacques are destemmed and vatted in open vats - wooden or stainless steel - for an extended maceration of 3 to 4 weeks. During fermentation, pigeage is carried out twice a day, allowing a controlled and respectful extraction. The wine is then aged for about 18 months in oak barrels, with a third of the barrels being new. This process allows the tannins to be polished without imposing the wood, achieving a clean, precise expression deeply linked to the unique character of Louis Jadot Gevrey Chambertin 1er Cru Estournelles Saint-Jacques.
