Description
When Louis Jadot decided to set up in Chablis, it was not a simple gesture of expansion, but a declaration of principle: to return to the origin of Chardonnay, where the variety shows itself at its most austere and mineral. Founded in 1859, the maison has always sought to ensure that each wine accurately reflects its terroir, and in Chablis it found a terroir that speaks in whispers of stone, fossils and cold wind.
Louis Jadot Chablis was born in Kimmeridgiense marl soils, rich in marine fossils, which provide a saline and sharp imprint. The climate is continental, harsh, with harsh winters and dry summers, where spring frosts are a constant threat. This environment forges a wine of tension, precision and purity. Here, Chardonnay is not allowed to overindulge.
Winemaking
The vinification and ageing of Louis Jadot Chablis takes place exclusively in stainless steel tanks, a conscious choice to protect the freshness, acidic energy and naked expression of the wine. With no oak ageing, no technical frills, this Chablis seeks to showcase the unfiltered landscape: vibrant acidity, incisive minerality and restrained fruit.
Taste
On the nose, Louis Jadot Chablis displays a restrained palette: taut citrus fruits, such as lemon zest and white grapefruit, along with notes of green apple, wet chalk and a delicate background of white flower. Nothing jumps out, everything suggests. On the palate, the attack is clean, direct, with acidity that caresses the palate like a stream of cold water. Flavours of crisp pear, sea salt, and a faint trace of green almond flow. The finish is long, with a chalky echo, as if the wine is leaving a stony footprint as it passes.
