Description
A cool breeze from northern Burgundy inspired the birth of Louis Jadot Chablis Grand Cru Blanchot. The historic maison Jadot, faithful defender of terroir over technique, opted for this privileged climate on the right bank of the Serein, where the Jurassic marl soil and the eastern exposure provide one of the finest expressions of Chardonnay. In this unique enclave - the most delicate and ethereal of the seven Chablis Grand Cru -the winery made a radical decision: to respect the mineral character of the soil without disguising it with over-extraction or invasive wood. It is a wine born with the idea of being a mirror of the place, not of man's hand.
Winemaking
Louis Jadot Chablis Grand Cru Blanchot is harvested by hand, seeking the best expression of each cluster. After a gentle pressing, the must is divided: one part ferments in stainless steel vats, the other in 456-litre oak barrels. This double fermentation process preserves the fruity clarity and adds texture and depth. Ageing on fine lees lasts between 13 and 15 months, without marked bâtonnage, prioritising elegance and precision. The result is a Grand Cru where time has worked in silence, accentuating the nuances without altering its essence.
Taste
On the nose, Louis Jadot Chablis Grand Cru Blanchot is reserved at first, almost austere: notes of limestone, sea mist, pink grapefruit, white flower and a delicate echo of stone fruit - apricot, fresh quince. The palate is pure nerve: dry, vibrant acidity, with a chalky texture that caresses the palate. The wine moves forward with precision, almost like a taut thread, and displays notes of citrus, minerals and a hint of dried herbs that lengthens the finish. This is not an obvious or complacent Chardonnay: it demands time, air and attention. Its saline persistence and freshness make it ideal with seafood, ceviche, complex vegetarian dishes or simply on its own, for those seeking a pure expression of the vineyard. A Grand Cru of restraint and elegance that speaks more of soil than fruit.
