Description
In the commune of Pommard, in the Côte de Beaune, where Burgundy turns austere and deep, Vincent Girardin found his vocation at a very young age. At the age of 19, he took the reins of a few family hectares with the fixed idea of making wines that would express with surgical precision the soul of clay and limestone soils. Vincent Girardin Pommard Vieilles Vignes, made from 100% Pinot Noir, comes from 45-year-old vines located north of the village on the Volnay hillside, where the subsoil is heavy in clay and limestone rocks outcrop between the roots. Here, the plant must struggle, and so delivers less, but with more character.
Winemaking
The vinification of Vincent Girardin Pommard Vieilles Vignes begins with a manual harvest, with rigorous selection in the vineyard and in the cellar. The grapes, destemmed and barely crushed, are fermented in steel tanks after a cold maceration. Fermentation is precisely controlled and is accompanied by punching down and gentle pumping over. Ageing lasts 15 months in oak barrels, 30% of which are new. Malolactic fermentation takes place naturally in the barrel. Before bottling, the wine is blended from the different lots without fining, with a light filtration, always respecting the lunar calendar.
Taste
In the glass, Vincent Girardin Pommard Vieilles Vignes is a deep, almost opaque ruby colour. The nose reveals an elegant complexity: blackberries, blackcurrant, fine leather, notes of undergrowth and a delicate smoky and spicy background. The palate is structured, with tannins that are present but enveloping. The acidity is firm, supporting a ripe fruit core and a long finish with hints of liquorice, damp earth and black truffle. A serious wine, for those seeking depth and tension rather than exuberance.
