Description
In the heart of the Côte de Beaune, at the foot of the mythical Montrachet, lies a small basin where some of Burgundy's purest and most complex whites are born. It is there, on the Les Blanchots-Dessus plot, that Vincent Girardin Chassagne Montrachet 1er Cru Blanchot-Dessus carefully cultivates vines more than 60 years old, deeply rooted in brown soils formed on oolitic limestone from the Callovian. The work in the vineyard is meticulous, with pruning in Guyot Poussard and multiple green tillage. Vincent Girardin, known for his uncompromising quest for precision and elegance, has refused for years to increase yields, even when the market was pushing him to do so. For him, a great Burgundy wine begins with absolute respect for its origin.
Winemaking
The vinification of Vincent Girardin Chassagne Montrachet 1er Cru Blanchot-Dessus begins with a manual harvest, followed by a double selection: first in the vineyard and then in the cellar. The grapes are slowly pressed in a pneumatic press to extract the must with the utmost delicacy. After a light racking, the wine is fermented with indigenous yeasts in French oak barrels (15% new). The wine is aged for 18 months on its fine lees, without bâtonnage, respecting its purest character. Clarification and filtration are kept to a minimum, and bottling is carried out according to the lunar calendar, thus preserving the most faithful expression.
Taste
Vincent Girardin Chassagne Montrachet 1er Cru Blanchot-Dessus displays a delicate and elegant complexity on the nose: white flowers, stone fruits, lemon peel, acacia, light cream and a subtle hint of flint. On the palate, it offers an impeccable balance between volume and precision, with a silky texture crossed by a vibrant mineral tension. Notes of pear, white peach and brioche emerge, melding into a firm, defined structure. The finish is long, saline and deeply elegant. A Premier Cru Chardonnay of great finesse, ideal with fine seafood or creamy mushroom dishes.
