Description
From the stony soils of northwest Beaune, right next to the legendary Clos des Mouches, comes this Premier Cru from Vincent Girardin, a key figure in the Côte de Beaune. The Clos des Aigrots plot sits halfway up the hillside on clay and limestone soils, where vines over 40 years old sink their roots into an austere and vibrant terroir. Vincent Girardin, an advocate of respectful viticulture, opts for minimal intervention, relying on the natural expression of the vineyard. In a vintage marked by climatic uncertainty, he decided not to treat aggressively, risking production to preserve the authenticity of the fruit. The result: a Pinot Noir of pure and noble character.
Winemaking
The vinification of Vincent Girardin Beaune 1er Cru Clos des Aigrots begins with a carefully selected manual harvest, both in the field and in the cellar, where in some years optical technology is used. Depending on the quality of the grapes, a small proportion of whole bunches is incorporated. After cold maceration, fermentation takes place in stainless steel tanks with gentle pumping over and punching down to respect the integrity of the fruit. Vincent Girardin Beaune 1er Cru Clos des Aigrots is aged for 15 months in French oak barrels (30% new), where it also undergoes malolactic fermentation. Before bottling, which takes place according to the lunar calendar, the wine is very lightly filtered, without fining.
Taste
On the nose, Vincent Girardin Beaune 1er Cru Clos des Aigrots displays a precise and enveloping bouquet: fresh black fruits, soft spices, earthy notes and a mineral trace. The palate is round, juicy, with polished tannins and an acidity that elegantly supports the structure. There is tension, depth and a restrained energy that is released on a long finish, with echoes of graphite and wild cherry. Vincent Girardin Beaune 1er Cru Clos des Aigrots is a fine Pinot Noir but with substance, ideal for game meats, autumnal dishes or cured cheeses.
