Description
The story of Bimbache Pelibuey begins in El Hierro, the most remote of the Canary Islands, where Rayco Fernández and Pablo Ramos decided to make a wine outside the usual channels. Bureaucracy, as slow as the island's trade winds, prevented some plots from being officially recognised by the D.O. El Hierro. Far from waiting, they decided to make wine anyway, giving rise to this signature white, born of extreme vineyards and volcanic soils punished by salt. The varieties chosen - ListánBlanco, Vijariego Blanco and the extremely rare Marmajuelo Rosado -come from the three Herreño municipalities. Thus Bimbache Pelibuey is born, an uncompromising white, of terroir and tension, named after a sheep without wool: rustic, resistant, genuine.
Winemaking
Bimbache Pelibuey is fermented with indigenous yeasts, without chemical intervention. Part of the must is aged in stainless steel to preserve freshness; another part in French barrels of different sizes, where it remains for nine months on fine lees. This ageing adds texture without detracting from the verticality of the wine. Before bottling, the different batches are blended and only a minimal amount of sulphites are added, respecting the wine's natural expression as much as possible. The result is an agile white, without make-up, with a vibrant acidity more reminiscent of the structure of an Atlantic wine than a solar wine.
Taste
Bimbache Pelibuey opens with slightly reductive notes: wet volcanic stone, curry leaves, a whisper of camphor. Then green citrus and dried flowers emerge with aeration. The palate is taut, linear, with an acidity that cuts through the palate like a scalpel. There are hints of sweet camomile, soft mint, yellow fruit and exotic touches. As it evolves, it gains salinity and umami, with an electric minerality that accompanies it through to the finish. An austere but profound white, ideal for those who are looking for local wines, without artifice, with a volcanic character and an Atlantic soul.
