The white 2024 John Stone is a blend of Verijadiego Blanco and Listán Blanco from a single vineyard called Juan Piedra (literally, John Stone, or Stone John...) that was planted over 60 years ago on sandy soils in the higher part of Frontera with approximately 50% of each variety. It fermented with indigenous yeasts and matured in used oak barrels of different sizes for nine months. It has good ripeness and a contained 13% alcohol, which is relatively low for the vintage, with very good acidity and freshness reflected by a pH of 2.94 and 8.4 grams of acidity. They harvested earlier than in previous years (four or five different passes!), and the wine feels very complete and harmonious, the palate really balanced and the acidity integrated. There is a reductive, smoky, flinty touch that is different from the volcanic/sulfury reduction, making it different and, to me, very attractive. Perhaps it's the effect of the wood. It has a sharp and pungent mouthfeel that is effervescent in a way that makes you salivate, with a chalky texture. It should develop nicely in bottle. I like it very much; it has a lot of finesse. 1,900 bottles produced. It was bottled in June 2025. This wine was not produced in 2023 (or 2021).

Description

Bimbache John Stone wine comes from a singular vineyard called Piedra Juan, located in the upper part of El Monte, in the Frontera area. This vineyard, about 60 years old, is located on sandy soils of volcanic origin at an altitude of 700 metres. The location of the vineyard allows it to receive the almost constant trade winds, which gives the grapes special characteristics.

Winemaking

The varieties that make up this wine are Vijariego Blanco and Listán Blanco. The winemaking process begins with natural fermentation in stainless steel tanks and French oak barrels. During the 10 months of ageing in barrels, a fine layer of flor develops on the surface of the wine, which gives it particular organoleptic characteristics.

Taste

Bimbache John Stone is an orange wine, a category which is not to everyone's taste, but which undoubtedly has its followers. On the nose, it has aromas of caramel, citrus, apple, lemon peel, cheese, cream, lemon curd and yeast. On the palate, it maintains its mineral and volcanic sharpness, but adds creaminess and complexity thanks to its oak and lees ageing.
