Viña Somoza Vineyards
The 15 hectares of vineyards are between 30 and 60 years old and extend over rich hillside soils. They are mainly located in the municipalities of Chandoiro, surrounded by the rivers Xares and Bibei, Larouco and Treval, in Rubiá. In the latter, the oldest vines are found on soils rich in granite and slate. At Viña Somoza the vineyards are worked with respect, taking care of the grapes from the vineyard to the winemaking process. The grapes are controlled throughout the year, exhaustively analysing the ripening cycle of the grapes, so that they are harvested at the optimum moment. An initial selection of the grapes is carried out in the vineyard, with special care taken in transporting them to the winery, sorting them on the table and pressing them immediately, with traditional, manual viticulture being the protagonist throughout this process.
The grapes are harvested by hand, in boxes of no more than 15 kg, and sustainable viticulture is practised, working with the most important technical equipment for both grape classification and vinification.
Cold maceration is carried out in the first 24 / 48 hours, not exceeding 14ºC, followed by pressing and natural static racking. Fermentation is carried out with spontaneous yeasts at controlled temperatures in stainless steel tanks, vats and French oak barrels.
