Description
.The vineyard, cultivated organically, is planted exclusively with Palomino Fino, a variety reviled for years for its apparent neutrality, but which here finds its redemption. Viña Corrales does not put on make-up: it is vinified without being fermented as a dry, lively white wine, without fortification. Thus, what was customary becomes the exception, and what was background becomes the main voice. Peter opts for a direct expression of the soil and the year, without oxidative ageing make-up. The decision was controversial at the time, even branded as heresy in the heart of traditional Jerez. But he did not come to imitate, but to remember what the vino de pago was before the homogenisation of the soleras erased it all.
ElaborationThe
Palomino grapes are harvested by hand, in small boxes, looking for the right ripeness without losing freshness. They are pressed gently, with whole bunches, to obtain a clean and delicate must. Fermentation takes place in used French oak barrels, without temperature control, with indigenous yeasts. There is no rush: the wine remains on its fine lees for a few months, without battonage, just stillness and time,
it is not fortified with alcohol and does not enter the criaderas or soleras system

Viña Corrales is aged in casks, under a veil of flor for a few months, but without the intention of classifying it as fino. The aim is not the style, but the truth of the place. Bottled without fining or filtering, each vintage is a clear photograph of the vineyard, the climate and the patient hand of the winemaker.
TasteThe
first contact with Viña Corrales is almost silent, like walking barefoot into an abandoned church. The nose opens slowly: wet chalk, rye bread, wild camomile, and a breath of sea breeze. There is no exuberance, but precision. The wine breathes its albariza with pride, stripped of all artifice. As it aerates, hints of raw almond, lime zest and dried hay emerge. This is not a wine of fruit, but of mineral echoes and saline whispers, with
an austere, almost monastic entry. But it soon unfolds in layers: a very fine acidity, sharp as a silver thread, runs through the palate. There is tension, muscle, but no fat. Pungent saltiness, elegant bitterness, a vibrancy that lingers for a long time. The finish is dry, very long, with notes of green walnut and limestone, as if one had licked the white wall of a house in Sanlúcar after an easterly storm.
Viña Corrales is not a wine for everyone. It does not seek to please, it seeks to move. It is a dry white sherry in its rawest and most honest form, without concessions. A wine for those who love the truth of the soil and the beauty of the uncompromising.
