Palomino Fino is an ancient variety from Andalucía, also known in some places as Listán. It has mid budding and mid-late ripening. Its clusters are medium to big size with mid-big berries of thin skin. Palomino Fino grapes tend to decrease the acidity while ripening. This is a very fruitful variety but likely to suffer downy mildew, powdery mildew and canker. Palomino Fino vineyards render good outputs in dry, sunny and warm climates.
The first plantations of Palomino Fino are found on the Sanlúcar de Barrameda outskirts, in Jerez, at the north of Cádiz. Gradually it turned into the main variety in the production of Jerez wines (Sherry) where the typical “albariza” limestone soils make it fertile. Although this is one of the three authorised varieties in Jerez, this is with difference the most cultivated one in Andalucía. It is also authorised in Galicia, Rueda and Bierzo.
Palomino Fino wines are usually neutral, low-alcoholic (grapes have low fermentable sugar level and it is early harvested) with low acidity, which makes i tan ideal variety for fortified wines such as Fino or Amontillado. Palomino Fino still wines are normally bland, watery and lacking of acidity.
