Description
Tollot Beaut is one of those Burgundy estates that needs no fanfare to make its mark. The family has been working in the Côte de Beaune since the late 19th century and was also one of the pioneers in bottling their own wine – a bold and highly revealing decision: to place their trust in the strength of the vineyard rather than in the anonymity of the bulk wine trade. Tollot Beaut Savigny-Lavieres 1er Cru is made from 100%Pinot Noir and hails from one of the appellation’s finest slopes. Here, the limestone and clay give rise to a wine of tension, fragrance and serious delicacy – very Burgundian at its core, yet with that touch of mineral energy that elevates elegance beyond mere smoothness.
Production
Tollot Beaut Savigny-Lavieres 1er Cru begins in the winery with a meticulous hand-harvest, ensuring the fruit arrives intact, fresh and undamaged. From there, the winemaking follows a classic approach, without any gimmicks, featuring traditional fermentation and ageing for 10 to 12 months in French oak barrels. The aim is not to overload the wine with oak, but to refine it, elongate it and allow it that slow breathing space which refines the texture and brings the fruit into harmony. Everything is designed to ensure the vineyard continues to speak clearly: Pinot Noir, precise, clean and deeply rooted in its terroir.
Flavour
Tollot Beaut Savigny-Lavieres 1er Cru is not a wine with a delicate profile and serene character. It comes across as rather subtle, restrained, almost aristocratic, and then begins to unfold. Red cherry, raspberry, a hint of redcurrant, followed by violet, fresh earth, delicate undergrowth and a faint hint of spice. Everything is very well integrated, very serene; nothing stands out. On the palate, it enters silky, almost floating, but the chalky tension soon emerges. The red fruit traverses the palate with precision; the tannins are extremely fine, almost powdery; and the acidity pushes up from below like a cool current. It does not seek power, but rather length, finesse and vibrancy. The finish is floral, stony and fresh, with that blend of juiciness and discipline that only the finest Savigny Premier Crus achieve. A Burgundy of delightful purity, subtle in appearance, yet with far greater depth than it initially suggests.
