Description
Domaine Tollot-Beaut does not seek easy acclaim or immediate fruitiness. Its wines speak with an almost austere Burgundian candour, revealing the vineyard rather than the winemaker’s touch. The family has been cultivating vines in Burgundy since the late 19th century and, in Aloxe Corton, finds a more serious, more mineral, more taut expression of Pinot Noir. Tollot-Beaut Aloxe Corton 1er Cru Les Vercots is made from 100% Pinot Noir in this Beaune 1er Cru, at the foot of the Corton hill, on clay-limestone soils that impart structure, freshness and a distinct stony character. Here, the Pinot does not reveal itself with a sweet, seductive bouquet, but rather with vigour, depth and a very noble austerity. Tollot-Beaut could soften this character, making it more approachable, but prefers to preserve the true essence of the terroir: stone, tension and restrained fruit.
Winemaking
The grapes are harvested by hand, which is essential to protect the delicacy of the Pinot Noir from the very outset. In the winery, a classic, unadorned vinification process is employed, aiming for precise and measured extraction. Fermentation respects the identity of the fruit and the Premier Cru, without attempting to create volume where the vineyard calls for definition. The Tollot-Beaut Aloxe Corton 1er Cru Les Vercots is then aged for around 10 to 12 months in French oak barrels. The oak plays a perfectly subordinate role: it refines the tannins, brings the fruit together and adds a subtle spicy undertone, but never masks the chalky character of Les Vercots. The result is a straightforward, firm Premier Cru that is deeply rooted in its terroir.
Flavour
On the nose,Tollot Beaut Aloxe Corton 1er Cru Les Vercots appears reserved, almost cool at first, with red cherry, fresh plum, dried violet, damp earth and a background of chalk, stone and undergrowth. This is not an exuberant Pinot, but a wine of precision, more vertical than enveloping. On the palate, it enters silkily, but immediately reveals its structure: lively acidity, firm tannins and a chalky minerality that tightens and lengthens the finish. Ripe red fruit blends with bitter cherry, dark raspberry, delicate spices and an earthy undertone. The finish is long, fresh and briny, with that Burgundian seriousness that isn’t meant to please everyone. An authentic, taut, profound Pinot Noir, for those who love stone as much as fruit.
