Soaked in skins for 12 hours and gently pressed. Free-run fermentation in stainless steel tanks and oak barrels (50/50) for 18 months. Second fermentation in the bottle with a minimum ageing of 7 years and bottled without final dosage (Brut Nature).
Description
In western Estiria(Steiermark), where the alpine air meets an almost Adriatic influence, Franz Strohmeier learned that here the vineyard is not "mastered": it is listened to. Strohmeier Sekt The Spiral was born from a decision as simple as it was courageous: to keep only the best barrels from each vintage for a high-precision artisanal sparkling wine, a project that began in 2014 as a commitment to time and purity. The variety is Blauer Wildbacher, a red-skinned grape with sharp acidity, perfect for fine bubbles and a truly dry Brut Nature profile. The grapes come from the Lestein vineyard, a steep hillside near his home, with Opok (marl) soils and vines planted in the early 1980s, worked with minimal pruning to allow the plant to find its balance.
Winemaking
At Strohmeier Sekt The Spiral, the grapes are harvested by hand. The grapes are destemmed and spend 12 hours with the skins, looking for that pink and spicy trace without falling into the obvious. After gentle pressing, the must ferments spontaneously (including malolactic fermentation) in a 50/50 split of steel and wood for about 8 months. It is then bottled for secondary fermentation with organic sugar and yeast, following the traditional method. This is where the real signature of the wine begins: 7 years of bottle ageing on the lees, refining the grain of the bubbles and multiplying the complexity. It is disgorged, adjusted with just 10 ppm ofSO₂ and bottled without dosage: zero dosage, Brut Nature without make-up.
Taste
In Strohmeier Sekt The Spiral the nose doesn't seek applause: it's mineral and serious at first, with an echo of wet stone and bread. With air, tense red fruits appear - wild strawberry, cranberry, rhubarb - and a sapid nuance reminiscent of citrus peel, herbs and a touch of umami. On the palate the bubbles are very fine and creamy without losing their edge. The acidity crosses the palate like lightning, clean, tense, and gives way to a velvety texture that only comes with patience and long lees. Long, saline, bone dry finish: austere red fruit, savoury depth and a chalky persistence that begs for another sip.
