Description
Olivier Leflaive Chassagne-Montrachet Les Pierres was born from a very Burgundian and, at the same time, courageous idea: to let the terroir speak louder than technique. In Olivier Leflaive's house, where precision is learned as a craft, they say that Olivier preferred to "take away" rather than "put on": less make-up, less noise, more truth. This philosophy can be felt in every bottle: a white Chardonnay that does not seek to impress by volume, but by clarity.
We are in Chassagne-Montrachet, south of the Côte de Beaune(Burgundy), a broad, complex hillside where Chardonnay finds tension and muscle. The chalky clay soils (sometimes deeper towards Santenay, sometimes lighter and stony towards Puligny) give a clear mineral signature.
Winemaking
At Olivier Leflaive Chassagne Montrachet Les Pierres, viticulture is sustainable and the grapes are harvested 100% by hand. The grapes are whole and gently pressed to preserve their purity. The must is cleaned by static racking for 24 hours, keeping the finest fraction. Alcoholic fermentation and malolactic fermentation take place in oak barrels, seeking texture without losing nerve. Ageing lasts 18 months, and then the wine spends 6 months in stainless steel to sharpen the line and fix the freshness. The barrels are 100% oak, with about 20% new wood: a touch of structure and cream, without masking the terroir.
Taste
In Olivier Leflaive Chassagne Montrachet Les Pierres, the nose is fine and precise: ripe citrus (citron, lemon), fresh pear and a nuance of damp earth mingling with a cool stone minerality. With air, there is a touch of sap and a chalky, almost chalky sensation. Intense on the palate, it grows and opens up: vibrant attack, firm freshness and a gentle roundness that makes it very harmonious. The fruit is discreet, the centre is saline and stony; the oak brings a whisper of sweet spice and cream, never overpowering. Long, smooth, lingering finish, with ripe citrus and that mineral echo that invites another sip.
