In Puligny Montrachet, where limestone dictates character and patience is part of the craft, Olivier Leflaive understands that a white Burgundy wine can be much more than just a front door. The idea of Olivier Leflaive Bourgogne Les Sétilles stems from a courageous conviction: to make a Bourgogne Blanc with the soul of the Côte de Beaune, without make-up, letting the precision of the vineyard and measured ageing do the silent work. The name is not a poetic whim: "Les Sétilles" is the cadastral name of the village where the winery is located, a way of signing origin and philosophy at the same time. This wine is 100% Chardonnay, and is sourced from a mosaic of plots - dozens of climates - mainly from Puligny Montrachet and Meursault, with selected inputs from nearby areas to add tension and freshness. Predominantly clay-limestone and silty-clay soils, ripe vines and exposures that seek balance: sufficient ripeness, but always with the mineral nerve of Burgundy.

Winemaking

At Olivier Leflaive Bourgogne Les Sétilles, the work starts with sustainable viticulture and a mostly manual harvest, seeking intact grapes and a faithful reading of the terroir. In the cellar, tradition and precision are combined: 50% destemmed/crushed grapes and 50% whole cluster, followed by static racking to refine the must without draining it of substance. Total ageing lasts 14 months, alternating the tension of stainless steel with the complexity of barrel ageing: approximately 80% in barrel (with moderate use of new barrels) and 20% in steel, ending with a final period in stainless steel to recover purity and definition before bottling.

Taste

In Olivier Leflaive Bourgogne Les Sétilles, the nose does not seek to be exuberant: it is clean, fine and very Burgundian, with citrus aromas (lemon and lime), crisp apple and a hint of white flower. On opening, dried fruit (almond), a trace of discreet vanilla, and a wet chalky mineral sensation that underpins everything. Silky on the palate, but immediately tightens up: precise acidity, juicy centre and a finish that combines creaminess and salinity. The wood is perceived as texture, not noise. Persistent, straight and mineral: a Chardonnay from Burgundy that doesn't scream fruit, but stone, light and balanced.
