Olivier Leflaive has always defended a very Burgundian idea: terroir first and foremost, but with the courage to intervene as little as possible and only when it adds up. In 1984, at the request of an American importer, he took an unusual decision at the time: not just to sell wine, but to buy grapes and must to vinify with total control, refining the style with an almost artisanal precision. That philosophy is felt in this white wine from Burgundy: pure Chardonnay born in Auxey Duresses, a climat with history where ancient sarcophagi were found and whose name is linked to the expression "Danse Macabrée", as if the vineyard reminds us, in silence, that time rules. Olivier Leflaive Auxey-Duresses La Macabrée (Côte de Beaune) offers a less obvious and more stony Burgundy: chalky loams, slopes between 300-350 m and a natural freshness that cuts like a fine leaf. The cuvée combines two plots from the same climate (a young vineyard of 15 years old and an old vine of 55), seeking complexity without losing nerve; sustainable viticulture and manual harvesting.
Winemaking
At Olivier Leflaive Auxey Duresses La Macabrée, the grapes are gently worked: partial crushing and 24 hours of static racking for clarification by gravity. Alcoholic fermentation and malolactic fer mentation are carried out in barrels, and the total ageing period is 12 months, with a final 4 months in stainless steel tanks to recover tension and purity. The oak is measured: 15% new, the rest used, more to polish texture than to perfume.
Taste
In Olivier Leflaive Auxey Duresses La Macabrée, the nose is not looking for a show: firm white fruit, restrained lemon, hazelnut and a flash of flint. With air, a fine, integrated toasted touch appears, never sweet. The palate is taut and long, with a clean entry, wet chalky mid-palate and a saline finish that stretches the acidity without over-sharpening it. A serious, vertical and gastronomic Chardonnay from Côte de Beaune: not "fat", but precise, mineral and persistent.
