Description

Les Terres De Philéandre was born as a serious - and courageous - escapade by David Duband: already established in the Côte de Nuits, he decided to create a small négociant project under the name of his children to explore less obvious terroirs and to vinify them with a fixed idea: purity, energy and minimal intervention. It's not a fashionable gesture, but a position: less make-up, more landscape. Here the protagonist is Pinot Noir, worked to express Altura Burgundy with a fresher, more direct pulse.

In the AOC Bourgogne Hautes Côtes de Nuits, the vines are planted on hillsides and plateaus that are higher and more ventilated than the Côte d'Or. The climate is generally cooler, with slow ripening that preserves nerve and fragrance. The soils alternate marl and limestone with streaks of clay, a combination that produces wines with a delicate perfume, tension and a stony background reminiscent of wet chalk and cold rock. This singularity - more verticality than volume - defines the character of "Célénie".

Winemaking

At Les Terres De Philéandre Hautes Côtes de Nuits Célénie, the recipe is written with surgical precision and zero make-up. The Pinot Noir ferments with 60% whole cluster, seeking that high perfume and breezy tannin that only ripe stems give. Maceration lasts 11 days, with 5-7 punch-downs daily and occasional pump-overs, more to sculpt than to extract. After pressing, the wine rests for two weeks in barrels to decant and settle, and then is transferred to 25 hL foudres where it is aged calmly. Here comes Duband's leap of faith: no sulphur is added.

Ageing takes 10 months in foudres (25 hL) and then a minimum of 3 months in tank before bottling. It is bottled without fining or filtering to preserve texture, energy and that mineral thread that defines Altura Burgundy.

Taste

In the glass, Les Terres De Philéandre Hautes Côtes de Nuits Célénie does not scream: it opens with a trace of crisp red cherry, tart raspberry and a floral hint of violet. With airy notes of clean undergrowth, fine herbs and a subtle spicy nuance. The palate is taut and juicy, with an acidity that stretches the centre and a tannin that doesn't squeeze: it draws. The fruit remains red, not at all candied, and the finish leaves a chalky, saline, stone-cold sensation that invites the next sip. A Pinot Noir from Burgundy for those who enjoy it when the terroir whispers... and still leaves an echo.
