Description
David Duband did not conceive Les Terres De Philéandre to make a "bigger" Pinot Noir, but a truer one. In a Burgundy where the temptation of oak and extraction sometimes rules, he made a bold decision: to seek finesse over power and let the vineyard speak with its own voice. The name of the project - an intimate nod to his children - sums up the philosophy: patient work, respect for detail and an almost artisanal obsession with purity. Les Terres De Philéandre Fixin Rouge is 100% Pinot Noir and is made in Fixin (Côte de Nuits), an enclave of the appellation with a more earthy and structured character, where the limestone and marl soils and the continental climate create straight, taut reds with mineral undertones.
Winemaking
At Les Terres De Philéandre Fixin Rouge, the grapes are harvested by hand and the winery moves with a classic Burgundian pulse: meticulous selection, fermentation with indigenous yeasts and an important use of whole bunches(60-90%), which provides aromatic energy and a more vertical skeleton. Extraction is conducted with tact -even with traditional treading- looking for silky texture, not muscle. The wine is aged in barrels for 10-14 months, with a moderate proportion of new oak (approx. 30-40%) so that the wood frames the wine without blocking it. The result is bottled preserving the intention of transparency: minimum intervention, maximum precision.
Taste
In Les Terres De Philéandre Fixin Rouge the nose does not explode: it refines. First a freshness of undergrowth emerges, a note of pine and subtle resin, and then the red fruit comes to the fore: cherry, raspberry and strawberry, clean, without jam. With air, nuances of dried leaves, fine spices and a barely tactile vanilla appear. The palate enters smoothly, but the wine stretches like an athlete: vibrant acidity, firm centre and polished tannin that holds without drying. The finish is long, slightly earthy and mineral, with the fruit returning darker and a sense of serious Burgundy: quiet, straight and tremendously gastronomic.
